Quick Tahini Noodles

Creamy, savory and packed with flavor, these Quick Tahini Noodles are the perfect plant-based meal. Ready in just 15 minutes, this dish is a go-to for busy days when you need a nutritious and satisfying option.
Ingredients
8 oz (225g) noodles (e.g., soba, rice noodles, or whole-grain spaghetti)
4 tbsp tahini
3 tbsp soy sauce or tamari (for gluten-free)
1 tbsp rice vinegar or lime juice
1 tbsp maple syrup or agave nectar
1 tbsp sesame oil for extra flavor (optional)
1 tbsp grated fresh ginger or ½ teaspoon ground ginger
2 cloves garlic, (optional)
2-4 tbsp warm water (to adjust sauce consistency)
1 cup steamed or stir-fried vegetables (e.g., broccoli, peppers, carrot, snap peas)
Optional toppings: sesame seeds, chopped green onions, crushed peanuts or chili flakes
Instructions
Cook the Noodles
Cook the noodles according to the package instructions. Drain and rinse under cold water to prevent sticking, then set aside.
Make the Tahini Sauce
In a blender, add tahini, soy sauce, rice vinegar (or lime juice), maple syrup, sesame oil (if using), ginger and garlic. Gradually add warm water, 1 tablespoon at a time until the sauce reaches your desired consistency (smooth and pourable).
Prepare the Vegetables
While the noodles cook, steam or stir-fry your choice of vegetables until tender but crisp.
Combine Everything
Toss the cooked noodles with the tahini sauce until evenly coated. Add the vegetables and toss again to combine.
Serve and Garnish
Divide the noodles into bowls. Garnish with sesame seeds, chopped green onions, crushed peanuts or chili flakes for extra flavor and texture.
